Turkish Semolina Cake, or Revani, is a very simple recipe which you can dress up however you like. Revani is basically a yellow cake made from flour and semolina, which is just a coarse flour made from durum wheat. After the cake has baked, you pour on a sugar syrup, similar to baklava, and top it off with either coconut flakes or your favorite whipped cream. Ok, I agree, the sugar syrup sounds like a bit much. But once it soaks in to the cake, it turns into a lightly moist cake that is easy to eat without needing a drink to go along with it. This cake has a nice vanilla flavor to it and the semolina gives this cake a nice consistency. It really puts a new spin on the traditional yellow cake. There are all sorts of different varieties though. Some are sprinkled with nuts, coconut flakes, topped with whipped cream or ice cream, and sometimes poppy seeds are added to the cake mix.
