Hey, hi, hello everyone and welcome back to Morgs' Menu! This video is part 2 of 2 of my Thanksgiving recipes. I show you how I make my Crockpot Macaroni & Cheese, Crockpot Southern-Style Green Beans, Sweet Potato Casserole, Stuffing and Mashed Potatoes. Thanks for watching my video! Crockpot Macaroni & Cheese Ingredients- 16 oz. macaroni noodles 16 oz. Velveeta cheese 4 cups shredded cheddar 1 can coconut milk or evaporated milk 2 cups regular milk ¾ cups melted butter 3 eggs (whisked) Salt Pepper Instructions- 1. Cook macaroni noodles according to box instructions less 3 minutes 2. Spray crockpot with cooking spray 3. Cut Velveeta block into small cubes 4. Add in cooked macaroni noodles, both milks, melted butter, whisked eggs, shredded cheese, cubed Velveeta, salt and pepper 5. Mix together 6. Cook on low for 2 and a half hours, stirring every 30 minutes to an hour This recipe makes ~10 servings. _______________________________________ Crockpot Southern-Style Green Beans Ingredients- 3 lbs. fresh green beans 3 – 5 cups chicken broth ~8 slices bacon (6 if thick-cut) 1 yellow onion Salt Pepper Instructions- 1. Cook bacon in the oven, pan fry, or however desired (bacon bits can be used to skip this step) 2. Slice onion and crumble cooked bacon 3. Spray crockpot with cooking spray 4. Add green beans, bacon, onion, salt and pepper into crockpot 5. Add in crockpot until green beans are covered 6. Cook on high for about 4 hours or low for 6 – 8, stirring occasionally This recipe makes ~12 servings. ____________________________________ Sweet Potato Casserole Ingredients- 5 large sweet potatoes 1 cup granulated sugar 1 cup milk 2 large eggs 1 teaspoon vanilla extract 1 teaspoon salt 1 cup light brown sugar 1/2 cup all-purpose flour 6 tablespoons butter 1 cup chopped pecans Instructions- 1. Preheat oven to 400 F 2. Line a baking sheet with aluminum foil and spray with cooking spray 3. Pierce potatoes with a fork 4. Spray each potato with cooking spray (or cover with oil) 5. Bake for about an hour (until soft) 6. Allow potatoes to cool (for at least 20 – 30 minutes) until able to handle 7. Peel potatoes (it should be easily removed if potatoes are fully cooked) 8. In a large bowl, add in peeled potatoes, white sugar, milk, eggs, vanilla extract, and salt; mix together until mostly smooth (some lumps are okay) 9. Cut butter into very small cubes 10. In a smaller bowl, add in brown sugar, flour, and cubed butter; mash/combine with a fork 11. Add in pecans and stir to finalize combining all ingredients 12. Spray a large baking pan with cooking spray 13. Add in potato mixture in an even layer and top with pecan mixture 14. Bake at 400 F for about 35 – 45 minutes This recipe makes ~10 servings. ______________________________________ Stuffing Ingredients- 2 small onions 4 – 6 stalks celery 10 tbsp. butter 1 ½ teaspoons poultry seasoning 12 cups bread cubes 3-4 cups chicken broth 2 tablespoons parsley Optional herbs: thyme, rosemary, or sage Instructions- 1. Preheat oven to 350 F 2. Diced onions and celery 3. Add 3 – 4 tbsp. butter, diced onions and celery, poultry seasoning, and any optional herbs into a large pan at medium heat; cook until translucent (about 10 – 12 minutes) 4. Cube bread and add into large bowl along with onion mixture 5. Add broth until bread is just becoming moist (not soggy!) and stir to combine 6. Spray a large baking pan with cooking spray and add in mixture in an even layer 7. Cube remaining butter and top mixture 8. Cover with aluminum foil and bake for 35 minutes 9. Remove foil and bake for another 10 – 15 minutes This recipe makes ~12 servings. ________________________________________ Mashed potatoes Ingredients- 8 – 10 medium potatoes ~1 cup sour cream (or plain Greek yogurt) ½ cup butter Salt and pepper Instructions- 1. Peel potatoes (if desired) 2. Cube potatoes and add into large pot 3. Add in cold water until potatoes are covered 4. Add pot onto stove at high and bring to boil 5. Cook boiling for 15 – 20 minutes until soft 6. Drain out water and add potatoes back to pot or in large serving bowl 7. Add in sour cream, butter, salt and pepper 8.
