You and your kids would love this for sure! :) Written Recipe : 1. Add a tsp of any vegetable oil in a pan on medium-flame 2. Add 2 green-chillies, 1/2 inch ginger & 4-5 garlic cloves to the oil & sauté for 30 seconds . 3. Add 3/4 cup capsicum and sauté for 1.5 minutes so, all its water is evaporated .Now, add 3/4 cup boiled peas & 1/4 cup boiled sweet corn . You can also add thinly chopped French - beans (optional).And, sauté again for 1 more minute. 4. Take all the veggies out of the pan in a plate / bowl & keep it aside & let it cool down. 5. Now, take 150 Gms blanched spinach ( wash spinach with little stem or only leaves & put it in boiling water for 1 minute then, strain it & keep it in ice cold water to retain the green color & again strain it ). 6. Put blanched spinach in blender/mixer to make purée. 7. Put 130 GMs boiled chickpeas in the same mixer to make fine paste ( soak chickpeas overnight minimum for 8 hrs. Then, put the same in cooker with 1/4 tsp salt & water 1/2 inch above the chickpeas, they must float into the water take 6-7 whistles & once cooker cools down , open & strain the excess water) 8. Add cooled down veggies which we sauté earlier to the same blender to make paste. 9. Do not use water while making paste , can add 1 tsp oil if required. 10. Take the paste in an empty bowl. Add 100 GMs grated paneer ( cottage cheese) ,2 boiled & cooled down mashed potatoes , bread crumbs ( 3-4 breads dry roasted on pan, can also do on toaster), 2 tbsp fresh coriander leaves chopped to it. 11. Add all dry spices to the same bowl (1tsp chilli flakes , 1 tsp chaat masala, 1/2 tsp dry-mango powder, 1/2 tsp coriander powder, 1/4 tsp turmeric, salt as per taste) . Mix everything well with spoon or hands . Now, add 2 tbsp corn-flour. If mixture is very sticky or moist can add more bread crumbs only if required. Mix well again. 12. Grease your hands with oil & take a portion to make balls or give the desired shape you want the, make indent at the center to fill grated mozzarella cheese or any cheese cubes like Amul. Roll it again & pack or close properly so, that cheese doesn’t come out. 13. Refrigerate them for 15-20 mins to set . 14. Prepare a slurry with 3 tbsp all purpose flour & water to make a flowing consistency batter. 15. Coat all the patties/tikkis in slury then,coat the Patties with bread-crumbs 16. Shallow fry these TIKKI / patties in medium hot oil until golden brown both the sides. It takes 1.5 to 2 mins to cook from one side !! 17. Serve with ketchup or dip of your choice. 18.
